Our Mitten Kitchen: Quick Holiday Cookies

Hi again,

As I have mentioned before, I love to be in the kitchen. I wanted to share 3 cookie recipes for the holiday season for all of you still looking for a quick treat to make. I have searched Pinterest and my family cookbooks to bring you my favorite ones. They are all so different yet very satisfying.

This past weekend I took a trip home to tear up the kitchen with my favorite baking partner, my mother!

Ricotta Cookies with a Strawberry Glaze
What You'll Need:
Dough
- 1/2 cup butter (room temp)
- 1 cup sugar
- 1 egg
- 8 oz. ricotta cheese
- 1 teaspoon vanilla
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
Glaze
- 1.2 oz of freeze dried strawberries
- 1 1/2 cups powder sugar
- 1/4 cup whole milk (I used a little more due to thickness. Play around with it until you get a glaze that is easily spreadable)

What To Do:
1.  Preheat oven to 350 degrees
2. Mix all dry ingredients together
3. In a separate bowl, cream butter and sugar. Then beat in egg, vanilla and ricotta cheese
4. Combine dry and wet ingredients
5. Once dough is formed, scoop out on lined baking sheet. Bake for 12-13 minutes
6. As the cookies come out of the oven, begin glazing as the glaze will melt and spread on the warm cookies
7. Allow to cool and enjoy!





Peppermint and Dark Chocolate Cookies


What You'll Need:
- 2 cups flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 cup butter (room temperature)
- 1/2 cup sugar
- 1 cup brown sugar (packed)
- 2 eggs
- Peppermint extract (I used a tiny drop. Perfect amount!)
- 1 bag white candy melts or white chocolate chips (for dipping purposes)
- Crushed candy canes (for decorating purposes)
- Sprinkles (for decorating purposes)

What To Do:
1. Combine all dry ingredients
2. In a separate bowl, beat butter and sugars until fluffy. Then continue to add all wet ingredients and beat.
3. Combine wet and dry ingredients together and mix until dough is formed.
4. Let dough chill for at least one hour.
5. Once chilled, roll into small balls and place on greased cookie sheet
6. Bake at 350 for 10-15 minutes
7. Once baked and cooled. Melt white chocolate/candy melts according to instructions
8. Dip 1/2 cookie in chocolate and then immediately sprinkle candy canes and/or sprinkles on side





Butterscotch Preztel Cookies

What You'll Need:
- 1 cup butter
- 2 1/2 cups of flour
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1 1/2 cups of brown sugar
- 2 eggs
- 2 teaspoons of vanilla
- 3/4 cup of butterscotch chips
- 3/4 cup of chocolate chips
- 1 cup of crushed pretzels (I used the square shaped ones)


What To Do:
1. As above, mix wet and dry ingredients separate then blend together for dough. Ensure you melt/bowl the butter prior mixing in.
2. Add in butterscotch, chocolate chips, and preztels as desired. (I used a little less than what this recipe called for)
3. Bake at 350 for 10-12 minutes until golden brown.
4. Once out of oven, sprinkle with sea salt and enjoy.




The Best Cannoli Filling You Will Ever Taste: (Not Shown)
I am passionate about my culture and well...cannolis! This filling can be used in store bought shells, as a dessert dip or in your own shells too! Enjoy!

What You'll Need:
- 3 lbs of ricotta cheese
- 1 large Hershey bar with Almonds (finely chopped and fold in last)
- 1 package of instant vanilla pudding
- Powder sugar to taste (start small and add accordingly)

What to Do: Mix it all up until creamy :)
