National Margarita Day
Monday, February 22, 2016Whoo-hoo! Happy National Margarita Day everyone! Fun fact, we love margaritas. Who freaking doesn’t? This past weekend I concocted some yummy drinks that I wanted to share for this glorious “holiday.”

Pomegranate Margarita
· Ingredients:
o
Lime wedge
o
Salt
o
4 ounces white tequila
o
2 ounces Triple Sec
o
1/2 cup pomegranate juice
o
1 lime, juiced
o
Club soda (optional)
· Directions:
Pour salt onto a plate. With a lime wedge, rub along the rim
of a glass and dip glasses upside down to salt the rim. Fill glasses with ice.
In a cocktail shaker with ice place the tequila, triple sec, pomegranate juice,
and lime juice. Pour into the salt-rimmed glasses and top off with club soda.
Garnish with a lime wedge, if desired.
Pineapple
Margarita Slushies
· Ingredients:
o
4 cups frozen diced pineapple
o
Juice from 2 limes
o
1/4 cup orange juice concentrate
o
1/2 cup coconut sugar (or brown sugar)
o
1-1/2 cups tequila
o
3/4 cup triple sec
o
1 cup ice cubes
Directions:
Place all ingredients in a high-speed blender and blend on high speed until mixture is smooth and slushy. Serve margarita slushies in a salt-rimmed glass immediately, OR place in freezer until ready to serve.
